Setting my iPad up from scratch is a bit tedious & I haven't started on email yet.

I did a reset on the iPad to set it up from scratch rather than restoring from backup & it connects to the old account with no problem. Probably a good idea to do that anyway, instead of leaving it littered with hundreds of apps I never use.

I wondered about that, but I can’t find anywhere that will let me check or remove old devices.

In the early days of having Apple devices, we just had a single iTunes account. Later, when we started to have personal devices, rather than general household ones, we set up separate accounts. For some reason, my new phone and iPad won’t let me do app updates using the old account. I can use it from my laptop, so it’s not that the ID is wrong, or that the account doesn’t work at all. It’s very irritating.
